Asparagus In Stewed Salted Cod.

After moving to Canada I was exposed to many ‘new’ ingredients, which were not found in the typical Caribbean garden or market. One such ingredient which became an immediate hit with my taste buds was asparagus. Normally I’d grill them, but early in the season when it’s still a bit too cold to go outside and spark up the grill, I like doing this sort of stew (stir-fry for many). Based on the method we use for making a saltfish (salted cod) stew in the Caribbean, this is certainly one of the best ways to enjoy asparagus.

You’ll Need..

1 cup prepared saltfish (salted cod)
1/2 large onion
1 clove garlic (optional)
1 Cubanelle pepper (or bell)
1 lb asparagus
2 tablespoon veg oil (olive or coconut is better)
1/4 teaspoon black pepper
8-10 cherry tomatoes
2 scallions
3-4 sprigs thyme

Prepare the salted cod (or dry salted fish of choice). Basically you’ll soak in water or boil to re-hydrate and remove most of the salt it’s cured in. Then shred into small pieces and set aside.

Now prepare the other ingredients. Remove the woody ends of the asparagus (and discard), then cut into 1 inch pieces. Chop the onion, pepper and scallion. Finely chop the garlic and slice the cherry tomatoes in half. You can use a large tomato cubed if you want.

Heat the oil on a low flame in a wide pan, then add the pieces of prepared salted cod and cook on LOW for about 3 minutes.

Add the garlic, thyme and black pepper and cook gently for another 2 minutes. Then turn up the heat to medium and add the sliced onion, and pepper. Cook for 2 minutes, now go in with all the other ingredients and cook on med-high for 3-5 minutes.

You can personalize this dish according to how ‘cooked’ you like your asparagus. I personally like them with a little crunch, so this cooking time was enough. You’ll notice that I didn’t add any salt to the dish as the residual salt from the fish was enough for my liking. Feel free to adjust.

Saltfish (salted cod) Stir Fry Recipe.

In the past we’ve used beef and shrimp as the base for delightful stir fry Caribbean style, but there’s no reason why we can’t use one of the most popular ingredients in the Caribbean with similar or dare I say better results. Saltfish (dry slated cod or other white fish) is a much revered ingredient throughout the Caribbean, so using it to add flavor to a quick stir fry came quite natural.

 

You’ll Need…

3/4 cup salted fish (flaked)
1 cup carrots (julienne)
2 cups cabbage
1.5 cups bell peppers (use any color you like)
2 scallions
1 medium onion
2 tablespoon vegetable oil
pinch black pepper
1/4 teaspoon grated ginger
1 teaspoon dark soy sauce (use gluten free if doing the recipe gluten free)
1 teaspoon fresh thyme
1/4 scotch bonnet pepper

Notes: You’ll need to prepare the salted fish before using. Cover with water in a  pot and boil for about 25 minutes. Drain, rinse (squeeze dry) and shred/flake. I usually get boned saltfish so I don’t have to worry about the tiny bones, but do keep an eye out for any which may still be present. If doing this recipe gluten free, please go through the list of ingredients to ensure they meet with your specific gluten free dietary needs.

Heat the oil in a wok or large non-stick frying pan on medium heat. Add the salted fish and cook for about 2-3 minutes. Then add the onion, ginger, thyme, carrots and bell peppers.

After 3 minutes (be sure to keep stirring) add the cabbage, soy sauce, black pepper and scotch bonnet pepper (don’t use any seeds). Mix well!

Here’s where you’ll personalize the dish.. I cooked it for 3 minutes after adding the cabbage as I like a little crunch on my vegetables (especially cabbage) but you can cook longer if you wish. Top with the scallions and get ready to serve.

You’ll notice that we didn’t add any salt to this dish as the slated fish will still have a trace amount of salt and the soy sauce will also help finish seasoning the dish. I would recommend serving this as soon as you’re done, so you get the full freshness of the vegetables. In less than7 minutes, you’ll have a wonderful dish to serve your family. BTW, this saltfish stir fry makes delicious sandwiches.

Game day tomato and saltfish?

tomato and saltfish recipeIt’s tradition whenever the “Soca Warriors” play a game I try to cook up a batch of pelau. Nothing beats watching your favourite football (soccer) team and enjoying one of your favourite dishes. Today the “Warriors” are scheduled to play a very crucial game against the US, so normally by now I’d have seasoned chicken marinating to cook up as game time approaches. But today is a bit different. Lately I’ve been having a craving for ground provisions so I went out and purchased some eddoes. I was about to make some stewed beef to go with the eddoes, but since time is against me I’ve settled for tomato and saltfish. After all it’s fairly quick and easy to prepare and it doesn’t require having to thaw out frozen meat from the freezer.

So I’ve gone ahead and made up a batch of saltfish with tomatoes (which I will reheat later) and about 30 minutes before the game starts I’ll put the eddoes to boil. If you’re not familiar with eddoes, do a keyword search in search box (top right) above.

You’ll need…

4-6 oz of salted fish
1 large tomato sliced
1 scallion sliced
1 medium onion sliced
1-2 cloves garlic sliced thin
2-3 chili peppers (optional) or use whatever hot pepper you have or like
fresh ground black pepper
couple sprigs thyme (optional)
1 teaspoon ketchup
3 tablespoons extra virgin olive oil

Start by placing the saltfish in a fairly deep bowl, then pour enough boiling water to completely cover it. Allow this to soak from about 25 minutes, then rinse and squeeze out any extra water (remember to make sure the water is cool so you don’t get burn). Then shred the saltfish as we did when we made the saltfish buljol recipe.

The next step is to slice the onion, galric, tomato and scallion. Then in a saucepan heat the oil and toss in the pieces of saltfish. Allow this to cook for about 1-2 minutes so the oil is flavoured with the salted fish. Then add the garlic, pepper and onion and allow this to cook for another couple minutes before adding the rest of the ingredients.

Be sure to add a dash of fresh ground black pepper and stir everything around. Allow this to cook for another couple minutes, then it’s ready for serving. If you wish, at the end you can toss is a teaspoon of Goldenray butter, but you have to be careful that the dish doesn’t go salty. Remember the fish was cured in salt, so it can easily have too much salt by adding the Goldenray butter.

Since I added whole chili peppers and not sliced scotch bonnet or habanero, near the end I use my spoon to crush the pepper in the pot so it releases some of it’s heat into the dish. But as mentioned, the pepper is totally optional.

Not only is this great with ground provisions like eddoes, yam, cassava, green bananas and dasheen, it’s also excellent with roti or fry bake. And there’s absolutely nothing wrong using it for sandwiches as well (just use less oil).
