Fried Seasoned Red Snapper.

The only way our mom would get us to eat fish as kids was when she would pan fry King Fish and serve it to us with ketchup and a little pepper sauce. I guess it’s the same way our daughters learned to appreciate fish, as my mom (grandma) would purposely make fried fish when she visited to get them liking something most North American kids passionately hate. Seasoned to perfection and marinated for a couple hrs before they’re dusted in flour and pan fried, this recipe can be adopted for any fish you like. For me, it MUST be sea fish (I’m no friend of fresh water fish) and I want it hot and even better if the skin is a bit crisp.

 

You’ll Need…

2 lbs Red Snapper
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 onion diced fine
1/2 teaspoon pepper sauce
1/4 teaspoon curry powder
1 teaspoon Caribbean Green Seasoning
2 cloves garlic crushed
1/2 cup flour
veg oil for frying

Notes: I used a Madras curry powder, blended in the Caribbean. You can use finely chopped scotch bonnet instead of peppersauce or any hot sauce you like. I used 3 small Red Snappers.. beware of bones when eating/serving. Feel free to use any type of fish you like as this recipe is very forgiving.

Scale, gut and wash the fish, then pat dry and get ready to marinate. But before you do so, (depending on how large your fish are.. 2 cuts may be necessary) give it a shallow cut across the belly so the marinade will do it’s thing.

Pour everything except the flour and oil on the fish and massage it into the fish (belly cavity and cut/s). Cover and allow it to marinate in the fridge for at least 1 hr.

Put about 2-3 cups of vegetable oil to heat on a med flame and get the seasoned fish ready for frying. Set up a sort of station, with a plate with the flour, the pan with the heated oil and a plate lined with paper towels to drain off the excess oil after frying. WARNING! Be sure to open the windows in the your kitchen and turn on the exhaust fan if you have one. The scent of fried fish will linger.

Dust the fish in the flour, don’t worry about shaking off the marinade as it will be delightful when cooked with the fish. Make sure to cover both sides of the fish, then gently place them into the hot oil. The idea is to cook the fish on each side for about 4-6 minutes (depending on the thickness of the fish you use and how crisp you like your fried fish). After which it’s just a matter of placing on the paper towels, then serve warm. If you’re reheating these, I would recommend doing so in an oven and not a microwave.

IMPORTANT! If you’re using whole fish as I did , do remember there will be bones (choking hazard). This recipe will also work great with fish fillets (bones removed) so that would be a good option if you plan serving this to kids. You may ask why bother with anything but fillets.. if you’ve ever had a fried whole fish, you’ll know how tasty it can be.

Spicy Fish Balls

After posting a pic of this finished spicy fish balls on Facebook, someone commented “must be a male fish!”. Rude talk aside, I thought it was funny. I don’t recall if it was in Guyana or in Barbados I first had something similar, but I do recall how tasty they were, so I knew back then I’d have to  come up with a recipe sooner or later. In keeping with this month’s theme of party food with a Caribbean twist for the holiday season.. I give you the most delicious fish balls you’ll ever try. With the use of panko bread crumbs and Parmesan cheese, you’ll see how international this recipe really is.

WARNING! The diced scotch bonnet will give this a wicked kick, so feel free to cut back on it or leave it out if you’re overly concerned about the heat (chicken).

 

You’ll Need…

1 lb fresh cod fillets
2 cloves garlic (crushed)
3/4 cup Parmesan cheese
1 tablespoon chopped parsley
1 tablespoon chopped thyme
2 eggs
3/4 cup panko bread crumbs (any bread crumbs should work)
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 scotch bonnet pepper (diced finely)
2-3 cups veg oil for frying
1/2 cup flour for dusting

Wash and pat the fish dry with some paper towels. If you’re using frozen (pre packaged) cod, give it a good squeeze as there’s usually a lot of water in it. Then cut into chunks and place into a food processor. The entire recipe will be done in the food processor, but if you don’t have one, don’t fret. Simply chop the cod fish very fine and mix all the ingredients in a large bowl.

Give the fish a few pulses in the food processor and remember to scrape down the side so you get an even consistency. Then add all the other ingredients except the flour and the veg oil for frying.

Please remember to chop the herbs very fine and crush the garlic. The scotch bonnet pepper should also be very fine and do remember to wear gloves when handling them. Additionally, wash your hands with soap and water immediately after handing.

Pulse for a minute or two (remember to stop to scrape down), until you have a well mixed consistency.

Now it’s time to shape this into the small balls for frying. Take about a teaspoon full amount and roll in your hands to form the ball. Then toss in the flour (all purpose flour) to evenly coat the outside. This will help you get that lovely golden brown colour when fried. Be sure to do them all before you start to fry, as they will cook very fast. You can place them on a parchment lined cookie sheet so they don’t stick as they await their turn in the hot oil

Heat your oil on a medium/high heat and fry these for 3-4 minutes. I love using my wok for this as it maintains an even heat and with the high sides, I don’t make a mess on the stove. Drain on paper towels and serve with one of the many sauces I’ve shared over the past few years. Check the recipe index for the tamarind sauce, there’s the honey mustard mango sauce, the shado beni sauce and about 8 other spicy sauces there.

These fish balls are excellent on their own if you don’t feel like making a dipping sauce and if all fails, just get some ranch salad dressing from the grocery store and you’re good to go. These are best served warm in case you’re wondering.

  5. Shape this into the small balls for frying. Take about a tablespoon’s worth of filling and roll in your hands to form the ball.
  6. Roll balls in All-Purpose Flour (1/2 cup) and coat evenly.
  7. Heat the Vegetable Oil (as needed) over medium-high heat and fry balls for 3-4 minutes. Drain on paper towels.
  8. Serve warm with your favorite dipping sauce.

A Tasty Caribbean Recipe Using Green Bananas.

 

This recipe is a combination of many things. It’s a take on a recipe my mom would make but instead of using canned salmon as I did, she would normally use pieces of salted cod. Then about a year ago I saw Levis Roots of “Reggae Reggae Sauce” sauce fame cook up a batch of this with the help of some kids… if you’re from the UK and watch the Dragon’s Den you’ll know who I mean. I think he also calls himself the “Dragon Slayer”! But he used fresh caught mackerel in his dish.

Knowing that I had green fig (bananas) in the fridge, I had a severe craving for this sort of “country” dish about 8 pm last night. With no salted fish in the fridge, nor mackerel… the wheels of creativity went spinning and I decided on using the canned salmon that peeked at me from behind the can of corned beef in the cupboard (Mr. Salmon learned not to play hide and seek with a grown man).  There’s no better motivation in the kitchen than a craving and hunger!

 

You’ll Need…

5-7 green bananas (known as green fig or cooking bananas in the Caribbean)
1/2 teaspoon salt (for boiling the green bananas)

1 medium tomato
1 medium onion
1 scallion (green onion / spring onion)
1 clove garlic
1/4 habanero pepper (scotch bonnet or any hot pepper you like)
1 tablespoon ketchup
1/8 teaspoon black pepper
2 tablespoon olive oil (any cooking oil you like)
1 sprig thyme (dash dried thyme)
Salt – optional (add as needed)
1 can pink salmon

Note: If you’re shopping for green bananas in North America, they will be called cooking bananas. If you can’t find them in your grocery store, do ask a clerk and don’t buy ordinary bananas that are not ripe yet. You’re looking for ones that are really firm, brilliant green in color and no blemishes. If you’re peeling these as I did before boiling, do wear gloves or coat your hands with cooking oil to prevent the sort of ‘milk’ to cause your hands to be sticky and possibly itch. Don’t get that ‘milk’ (sap) onto your clothes.

Since the green fig will require the most time to cook, go ahead and peel, scrape and rinse them. You can also cook them in the skin and peel after they’ve been boiled. In a deep pot put enough water to cover the bananas and bring to a boil. Then add the bananas and salt.. bring back to a rolling boil and allow to cook for about 20 minutes.

While this cooks, lets prepare the other ingredients. Wash and chop the tomato, scallion, habanero pepper, thyme.. don’t forget the garlic and onion as well.

With the bananas fully cooked, drain and allow to cool while we get things really started. In a large saucepan put the olive oil to heat on a medium heat, then add the onion, garlic and thyme. Let them cook on the medium/low heat for about 3-5 minutes. We’re trying to get the onion translucent and release the rich flavors of the garlic and thyme. Next add the green onion, pepper, tomato and black pepper. Let that cook for about 3 minutes.

The next step is to add the can of salmon, including the water it was packaged in and ketchup. Break it up into flaky chunks, give it a good stir and allow to come back up to a gentle simmer… cook for another couple minutes.

While this cooks, the bananas should be cool enough to touch. Cut them into bite-sized pieces and get ready to toss them into the pot.

The final step is to toss in the cut pieces of cooked bananas into the pot, give it a good stir and allow it to heat through with all the other ingredients in the pot (about -35 minutes) and you’re done.

Since the canned salmon is usually packaged with a ton of sodium I don’t feel the need to add any salt, but do taste ad add accordingly as I’m sure your tolerance for salt will be different than mine.

This is one of those versatile dishes that works for any time of the day (or night as in my case)… even breakfast. Growing up on the islands you know we love our BIG breakfast, so though you may find this a bit heavy to start the day.. a Caribbean man would appreciate this (hint ladies). BTW, there’s enough here for 3-4 people if you have some coconut bake or toast on the side or a complete meal for two people.

To make this dish fully vegetarian, you can omit the canned fish, but add a little butter when cooking the onion and garlic at the start.

Memories of fry-dry sardines had me craving.

trini fry sardinesI’ve been blessed with the ability to cook most, if not all the dishes I enjoy (most) and the few that I can’t make, I usually get my mom to cook when she visits. That reminds me that I need her to come for a visit soon, to restock my freezer. Maybe I can get her to share her curry fish recipe with us… it’s to die for. Lately I’ve been having cravings for some of the dishes I grew up on and while in the market last Friday I got a flash back when I strolled pass the fish section. When was the last time I ate “fry dry sardines”? I recall my mom making that for dinner and served up with dhal and brown rice just in time for when my dad would come home from work. That man always had some sort of treat for us in his lunch bag, so it was always an eager anticipation when he opened it. Evening newspaper and a treat was always in that lunch bag of his.

I searched though the few fish stalls that were open and did manage to find one vendor with sardines, but they were a bit to big for what I had in mind (plus they were a bit mushy to the touch). The next option I had, was to use sea smelts as they were very close in size, shape and taste to the sardines we would get in the Caribbean. BTW, if you are getting smelts, note that there is a difference in taste from the fresh water variety, when compared to the sea (salt water) ones. I much prefer the sea smelts.

You’ll Need…

2 lbs smelts (see note below) (cleaned – with tail trimmed and head removed)
1/2 lime or lemon to wash the fish
1/4 teaspoon curry powder
1/4 teaspoon salt
dash of black pepper
1/4 hot pepper sliced thin (feel free to use your favourite hotsauce instead)
3 tablespoons cilantro (or 2-3 leaves of shado beni if you have- chopped fine)
3 cloves of garlic – crushed and then sliced thin
1 scallion sliced thin
3 sprigs of thyme

For pan frying…

1/2 cup all purpose flour
1 tablespoon butter (not margarine)
1/4 cup olive oil or whatever type of oil you have in stock.

Couple points. As mentioned above smelts are a great substitute if you can’t get fresh sardines. Also note that the traditional way of making this, includes using the heads of the fish (still attached). Since the smelts at the fish counter comes already trimmed, you may have to check in the frozen fish section of your grocery store to get some that’s complete. But that will mean you’ll have to clean them when they thaw out.

Start by washing the fish. In a bowl place the fish, squeeze the juice of 1/2 a lime or lemon and rinse with water. Then drain as best as you can and set aside. The next step is to prepare the seasonings we’ll be marinating the fish with. Go ahead and slice thin the – scallion, pepper, garlic, cilantro or shado beni and the thyme.

Now it’s time to combine everything we just sliced up with the fish and add the salt, black pepper, curry powder (gives it a wonderful flavour) and stir. For best results, place in the fridge to marinate for a few hours. What I usually do is put it into a sealed container as not to overpower the fridge with the strong seasoning scent. I try to leave it marinating for at least 2 hrs, but after 30 minutes you can go ahead and cook. (stays well overnight as well in the fridge)

After its been marinating it’s time to fry-dry those little morsels of fishy goodness. I try to take it out of the fridge at least 10 minutes before I start fryng so it comes back up to room temperature a bit.

In a wide pan put the oil and butter to heat on medium to high heat. In the meantime, put the flour on a paper towel and onto a plate to start dusting the seasoned fish. The reason why I use a paper towel first, is that when the flour gets soggy it will stick to the bare plate and making washing up after a bit sticky. Take the fish individually out of the bowl you had it marinating in and gently roll it in the flour to get an even coat. Don’t pay attention to any bits of seasoning that may still be attached to the fish. Once fried, that will add some nice flavours when you bite into it.

Once you think the oil is hot (not smoking) …butter should have melted and you’ll start seeing little bubbles around the edges. Start adding the seasoned and dusted fish. Try not to crowd the pan with too many. Allow to cook for about 5-7 minutes on each sde and then flip to cook evenly and get a well rounded golden brown colour. If you like a bit of a crunch (crispy) texture, allow to cook a little longer. You’ll also notice that the fish will firm up  if cooked all the way though and not be limp as when you fist put them into the oil/butter.

Remove that batch and repeat that process once more (dust with flour, place in the hot oil, flip and remove when cooked.

Be sure to drain on paper towels to absorb some of the grease and try to serve hot. If you can’t prepare in time for all your guests, you can stick then in a toaster oven to reheat for a few minutes. This way it will retain it’s crispiness.

As mentioned above, I love this with rise and dhal, but after the first batch was out of the pan,  I found myself eating away dipping into a mustard/ketchup/hotsauce combo sauce I made. This is also great as an appetizer (see dip recipe below), in sandwiches, as hors d’oeuvres or as a side to any normal dinner you make.

Here’s a quick and wonderful garlic mayo dip for this..

1 cup mayonnaise
1/2 cup milk
1 teaspoon garlic powder
1 teaspoon lemon juice
1/2 teaspoon white pepper

Combine everything in a blender or food processor.

My take on saltfish buljol.

saltfish buljolThough close to the real deal, this recipe is NOT how traditional saltfish buljol is made. My dad would tell us that his grandparents buljol was very simple.. shredded saltfish topped with hot oil. Sliced onions, hot peppers and tomato if you were lucky enough to have those things. In the Caribbean saltfish is “king”. Used on it’s own or as a flavour enhancer, it’s now found in many dishes up and down the Caribbean chain of islands. Gone are the days when saltfish was considered a “poor man’s” meal and ever since the decline of the cod population in eastern Canada, it’s become very expensive.

In my recipe I used salted Alaska pollock, but you’re free to use cod, hake or any other dried salted white fish you may have available to you. I would also recommend that you get the boneless variety to avoid having to remove the tiny bones when preparing this dish.

You’ll need…

1/4 lb dried saltfish
1/2 medium onion sliced very thin
1 medium tomato cubed
1 clove garlic chopped very small
1/4 cup green bell pepper cubed
1 green onion (scallion) chopped thin
dash of black pepper
4 tablespoons extra virgin olive oil

Place the salted fish in a deep bowl and boil enough water to completely cover it. After the water reaches boiling point (I use our electric kettle) pour it over the fish and allow it to soak for about 15 minutes or until it’s cool enough to work with. This water will help remove most of the “salt” that was used to cure the fish, or you’ll be stuck with a very salty dish. Not only does the hot water help remove the excess salt, it also makes the fish a bit tender and easier to shred.

Drain and rinse with tap water, then shred the fish into tiny bits. Try and squeeze out any remaining water that it may still have as best as possible.

Now slice, dice and chop the pepper, onion, tomato, scallion and garlic and add to the bowl with the shredded saltfish. Give it a good dose of fresh cracked black pepper and mix. Finally, heat the olive oil in a frying an and just before it starts to smoke, pour the heated olive oil onto the everything in the bowl. Mix thoroughly and serve.

Saltfish buljol can be served with ground provisions, rice and dhal, stuffed into fry bake, on sandwiches and as a topping for crackers. Add a bit more tomato, green and red bell peppers and toss in some shredded cabbage and you’ll have a great salad.

Gourmet salmon from a can?

canned-salmon-recipeNot sure of this should be classified as a recipe or not, but I do know it’s affectionately known as “bache” or bachelor food among the people I know. “Bache” usually refers to any food that can be cooked (or not) in under 5 minutes… basically something fast. As a youth this was the norm as part of Good Friday lunch. It’s true that we had access to tons of fresh fish being that we lived on islands, but somehow that salmon that came in a can still made it’s way onto our menu. You either had it on rice or with lovely ground provisions, like yam, eddoes and dasheen. My dad used to top his with olive oil, something only in my adult life did I learn to appreciate.

Get past the cat-food like appearance and the fact that it comes from a can, let’s give canned salmon a chance.

You’ll need…

1 can Salmon (Sockeye, Pink or Tea Rose Keta Salmon) 213g / 7.5 oz

dash of salt

dash of black pepper

1 medium tomato

1 clove garlic

1 medium onion

1 teaspoon ketchup

1 green onion (scallion)

hot pepper (optional)

3 sprigs of cilantro or 1 leaf of shado beni. (you may also use 1/4 teaspoon green seasoning mix)

Open the can of salmon and place in a pan over medium heat.

With a spoon or fork, break the salmon chunk in pieces (try not to crush)

Wash and slice the tomato, green onion, cilantro, garlic and onion. All the ingredients should now be added to the pot with the salmon chunks.

Gently stir everything together, including the ketchup, black pepper and salt. I usually don’t use salt, but I’m sure you may like it with a bit of salt. Remember, you can add salt last if it’s required also.

Cover and let simmer for about 5 minutes, or until all the ingredients get a chance to add their touch to the dish.

Didn’t I say this was a “bache” recipe… you’re done. Serve over rice, ground provisions or with bread.

I’ve also seen my mom use a bit of olive oil in the pan, then add the onion etc to cook a bit first and then add the salmon last. But I try not to use oil or salt, as the fish is already fatty and it’s usually packed in salt during the canning process.
