The Ultimate Chicken Tenders.

This recipe is based loosely on the way mom would make fried chicken for us as children. It’s a recipe I did quite often when my daughters were growing up (to prevent them asking for McDonalds) and something I still do when I get Chicken Tenders on sale at the market.

You’ll Need…

salted crackers (about 1/2 a pack)
2 lbs chicken tenders
vegetable oil (3 cups)
1 tablespoon Caribbean Green Seasoning
3/4 teaspoon sea salt
1/3 teaspoon black pepper
3 eggs (whisked)
1 cup all-purpose flour

  • Feel free to season the whisked eggs with a bit of salt and black pepper if you wish. I use vegetable oil for frying, but you can use whichever oil you like frying with. If you wanted to give these a go in your air fryer, spray them with a bit of cooking spray (oil) first.

Season the chicken tenders with the Caribbean Green Seasoning, salt and black pepper. Mix well to coat all the pieces of chicken. No need to marinate for long… maybe just the time you need to prep everything else.

You may use bread crumbs you can purchase at your bakery or grocery store, but I’m doing as our mom would do when we were growing up on the islands.

Place the salted crackers in a large zipper bag (or tea towel) and smash to crumbs with a rolling pin. The beauty of doing it this way is that you won’t have uniform crumbs, but some pieces will be bigger than others, thus giving the finished chicken tenders a uniqueness.

Now prep your breading station. The seasoned chicken, eggs (whisked) in a bowl, flour and the crumbs we made from the crackers.

Grab the tenders, dust it in the flour, then into the whisked eggs (shake off the excess egg), then roll/pat it in the crumbs. Repeat until you’re all done. I set each coated piece of chicken tender on a cookie sheet as I worked my way through them all.

Heat your veg oil on a med high heat in a wide pan, then add the breaded pieces of chicken.. don’t crowd the pan.

Fry, flip and fry again, for about 3-4 minutes on each side. Drain on a wire rack (on a cookie sheet to catch the excess oil). I explain why I don’t use paper towels in the video below.

As you take them out of the hot oil, you may sprinkle on some sea salt if you wish. I didn’t as I’m trying to cut back on the salt in my diet.

Serve warm! I did a Scotch Bonnet Honey Mustard Sauce to dunk these into. WARNING this sauce is SPICY and not rated for children use… unless they’re my daughters! Coconut Chicken Tenders Recipe [gluten free].

One of the most popular recipes I’ve shared to date is a version of the chicken strips mom would make for us as kids, but I was asked recently via FaceBook  if there was a gluten free version I had, that I’d be willing to share. With the Super Bowl just days away, I though it would be a great time to share this recipe as it’s a great party food idea. This coconut chicken tenders recipe is not only gluten free, super simple to make and quite tasty, it works well for people who are not fans of shrimp (similar to coconut shrimp).

You’ll Need…

1 lb chicken tenders
1 teaspoon Caribbean Green seasoning
1/4 teaspoon salt
2 cups veg oil (for frying)
1.5 cups shredded coconut (sweetened)
3/4 cup coconut flour (any gluten free flour)
1/2 teaspoon pimento (spicy smoked paprika)
3/4 cup milk
lemon zest (about 1/2 teaspoon)

For the dip:

1 cup ranch dressing
1 teaspoon sriracha

Important: Please go through the entire list of ingredients to make sure they meet with your specific gluten free dietary needs.

Marinate the chicken tenders with the salt and Caribbean Green seasoning for an hour. You can also use boneless thigh or chicken breast, strips.

It’s now time to set a station to batter them for frying. In a small bowl, whisk the milk, lemon zest and paprika. Then place the shredded coconut (sweetened) on a plate and do the same for the coconut flour or any gluten free flour.

Dust the chicken tenders in the coconut flour, then dip into the seasoned milk and roll in the coconut. Set aside and repeat until all the tenders are coated.

If you’re lactose intolerant, you can use a couple eggs instead of the milk.

Heat the vegetable oil on a medium flame and fry (be gentle so the coconut does not fall off) for about 4-5 minutes on each side. Basically until the chicken is fully cooked and you get that lovely golden color. Set on paper towels to soak up the extra oil. Try not to over-crowd your pan when frying.

The dipping sauce is SUPER simple. Whisk together the ranch dressing and sriracha, until combined. Add more or less hot stuff to your liking.

Try to serve warm to really get the true flavors of these lovely coconut chicken tenders. If you make them in advance you can warm them up in a moderate oven for a few minutes. My daughters had these for lunch, so I left them fairly big. But if you’re serving these at your next party, you can cut the chicken tenders into smaller pieces before marinating etc.

Island Style Chicken Strips.

After posting  the video recipe for these island style chicken strips on the Youtube channel, it quickly became one of the most requested recipes. Following on the technique we’d use for making fried chicken when I was a kid on the islands (still remember pounding the Crix crackers to make the crumbs), these could easily be the best chicken strips you’ll ever have. While making the Mango Honey Mustard BBQ Sauce I felt I needed to have something to go along with it and I really didn’t feel like grilling, so I went freezer diving and came up with a couple chicken breast. The rest is delicious history.

 

You’ll Need…

2 chicken breast (split) about 1 lb
2 eggs
2 scallions
1 tablespoon thyme
1 tablespoon parsley
1/4 teaspoon sea salt
salted crackers (about 1.5 cups crumbs)
1/4 teaspoon black pepper
2-3 cups oil for frying (veg oil)
3/4 cup all purpose flour

Notes. I used a bone in chicken breast which I got the strips from, but you’re free to use boneless chicken breast if you’d like to save on time. Remember to wash the strips with the juice of a lime or lemon and cool water, then drain dry.

Place the crackers in a zip lock bag or in a tea towel and using a rolling pi or wine bottle, crush until you have the consistency of bread crumbs. I like a bit of texture, so I try to leave some of it a bit chunky. Set aside in a bowl.

Chop (finely) the scallions, thyme and parsley. Then add it to the bowl with the cracker crumbs and give it a good stir. I know this step is a bit strange to my Caribbean readers as we’re seasoning the bread crumbs and not the chicken as we would traditionally do.

Cut the chicken into 1/4 inch strips (don’t fuss with being even), wash, drain and set aside. Crack both eggs into another bowl and toss in the black pepper and salt and give it a whisk. We now have the chicken cut into pieces, the seasoned crumbs and eggs. It’s time to set up a batter and frying station. We’ll need the veg oil in a deep pan (I used a small wok so the oil doesn’t splatter onto the stove while frying) on med/high heat, a plate with the flour, the seasoned crumbs, the chicken strips, egg wash and have a paper towel lined plate or basket to drian off the excess oil when the chicken strips are done cooking.

Take a piece of chicken and dust it in the flour, then into the eggs (make sure it’s covered in the eggs mix) and drain off the excess egg and roll in the seasoned bread crumbs. Do about 4-5 of these so once you start adding to the hot oil, you’ll have a few to go in at the same time.

Your oil should be hot by now, so gently place each strip in. Flip after a couple minutes and keep an eye on them. If you find that they’re browning too fast, turn your heat down a bit. It takes about 5-7 minutes to fully cook and have that lovely golden brown colour. Drain on the paper towels and continue until all the chicken strips are cooked. Sprinkle (while hot) with a little sea salt (not mentioned in the ingredient list).

These chicken strips will look stunning when they come out of the fryer, with the golden colour and specs of green herbs. And not to be out done… they will be absolutely delicious. With a wonderful crunch from the seasoned cracker crumbs (airy as if yo used panko crumbs), tender and very moist (fully cooked) on the inside. You’ll be a super hero to your kids after you serve up a batch of these.But be warned that they won’t want you to go back to the stuff you used to get them at Mc Donalds.

TIP: Thread each chicken strip onto a bamboo skewer before battering (cook as mentioned above) and you’ll have an attractive dish to take to your next company lunch… finger food heaven! Place on a platter lined with some leaf lettuce (gotta have a green back ground) and serve with a little of that mango honey mustard bbq sauce I showed you how to make a couple recipes ago. You’ll look like a culinary star!
